Gastronomy

La Sucursal is inspired by creative and market cuisine, with a permanent view of the valencian traditional recipes, applying the latest culinary tecniques, creating a quality brand which is recognized by the Michelin and Repsol Guide, among others. A balance between creative gastronomy and tradition, with a careful design of the spaces.

Fran Espí Chef

La Sucursal starts a new era under the direction of the new chef, Fran Espí (Valencia, 1998).

Fran, trained at the Veles e Vents Cuisine School, started a process of learning that leads him to work in the best kitchen of our country such as Disfrutar, Nerua, Bistro4, Zweierlei, (Düsseldorf)…

After that, he turned to Noor restaurant, from the prestigious chef Paco Morales working as a subchef.

Finally, he has returned  to La Sucursal, to promote a kitchen, where the flavor together the excellence on the product are defining elements. 

As Miriam de Andrés, Fran bets on from the market fish and vegetables for the valencian orchard, as a fundamental part of his propose. 

His influences from travelling around the world, together with an elaborate tecnique, accompany our gastronomic menus, where he hightlights the product of the área, such as fresh fish from the market and vegetables from the orchard. 

Words from Fran “the landscape around us inspire each of our creations . The technique let me translate our environment in a succession of bites that transport the customer to our magnific territory. This is, also, a bit tribute to Loles Salvador, due to I had the lucky to work with her.”
